My husband and I are heading to Iowa today! We are both extremely excited to see our families for Christmas. We’ll be in Northwest Iowa for a week and then Texas the week after that. Woo hoo! That being said, I’m taking a short hiatus from the blogosphere, but I’d first like to share this delicious truffle recipe with you.
I’ve been making Christmas candy for the last few Christmases, and it is readily becoming a tradition. I always like to try new things, so this year I decided to try an Eggnog Truffle, because, really, what could beat eggnog?
If you like eggnog and rich, decadent desserts, you’ll love this truffle. And it’s such a simple way to bring some extra Christmas cheer to the family gathering! For more candy recipes, read my other blog posts about candy, here and here.
Eggnog Truffles
INGREDIENTS:
2 cups white chocolate chips
1/2 cup eggnog
1/4 tsp salt
1/4 tsp nutmeg
White or dark chocolate for coating
METHOD:
1. In a medium bowl, combine 2 cups white chocolate chips, salt, and nutmeg. Place eggnog in a small saucepan over medium-high heat and bring it to a simmer.
2. Once the eggnog is simmer (with bubbles forming around the edges) pour it over the white chocolate. Stir until the chocolate is completely melted. If there are pockets of chocolate that won’t melt, heat in the microwave for 30 seconds.
3. Place cling wrap over the bowl and refrigerate until firm enough to scoop – about 2 hours.
4. Melt chocolate coating. Once candy is cool and hardened, scoop with a spoon and roll into one inch balls. Dip it into the chocolate coating and place on a baking sheet covered with parchment paper to set. Sprinkle with nutmeg.
