Lemon Poppyseed Granola

It is entirely possible that there is no better combination than sweet lemon and healthy granola. Which is why I chose to make Lemon Poppyseed Granola. Yum. Can’t you just taste it? Subtle sweetness, a delectable tang, and a hearty crunch… Perfect.

Lemon Poppyseed Granola

INGREDIENTS:

1 1/2 cups granola
2 tbsp poppyseeds
1/4 cup honey
1 egg white
1/2 cup coconut
zest of 2 lemons
juice of 2 lemons
1/4 tsp salt
nuts
vanilla

METHOD:

1. Zest lemons and squeeze out their juice. Put coconut in a bowl and mix with about 1/4 of the zest and 1 tbsp of the lemon juice. Spread on a cookie sheet and bake on 325F until lightly browned.

2. Meanwhile, combine granola, nuts, poppyseeds, and salt. In a separate bowl, mix together honey, remaining lemon juice and zest, egg white, and vanilla. Mix wet mixture with dry mixture and combine until dry ingredients are well coated.

3. Spread on ungreased cookie sheet and bake at 325F until brown and crispy.
