Nutella Chickpea Cookies

IMG_3174I know it’s all the craze. There are a billion Pinterest pins about it. BEAN COOKIES. Everyone’s doing it. It’s basically the hipster movement in baking. Nevertheless, here I am, sharing my chickpea cookie recipe. I mean, it is true that chickpeas (and beans of all sorts) are incredibly high in protein and fiber,ย making a treat like the cookie something your body won’t hate you for. I’ll take it.

Nutella Chickpea Cookies

INGREDIENTS:

1 can salt-free chickpeas
1 cup peanut butter
1/4 cup brown sugar
2 tbsp flax
1 egg
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
splash of vanilla
2 tbsp Nutella

METHOD:

1. Preheat oven to 375F. Rinse chickpeas and boil until soft. In a food processor or blender, blend chickpeas, peanut butter, brown sugar, flax, egg, baking soda and powder, salt, and vanilla until smooth. Mix in Nutella.

2. Cover a baking sheet with parchment paper, and form chickpea dough into balls. Place on baking sheet and bake for about 20 minutes or until cookies are firm.
